Un ristorante pu\u00f2 lavorare molto, incassare cifre importanti e produrre comunque margini insufficienti. Il problema, spesso, non \u00e8 la qualit\u00e0 della cucina e nemmeno la quantit\u00e0 di lavoro svolto.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il problema \u00e8 che si lavora senza conoscere con precisione i numeri.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Uno dei primi valori da monitorare \u00e8 il <strong>Food Cost<\/strong>, cio\u00e8 il costo delle materie prime utilizzate per realizzare ogni piatto.<\/p>\n\n\n\n<h2 id=\"h-che-cos-e-il-food-cost\" class=\"wp-block-heading\">Che cos\u2019\u00e8 il Food Cost<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Il Food Cost indica quanto il costo degli ingredienti incide sul prezzo di vendita di un piatto.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In termini semplici, ti dice quanti centesimi di ogni euro incassato servono per pagare le materie prime.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La formula \u00e8:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Food Cost % = costo degli ingredienti \u00f7 prezzo di vendita netto \u00d7 100<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Conoscere questo valore \u00e8 fondamentale. Se non sai quanto ti costa realmente produrre un piatto, non puoi sapere se il <a href=\"https:\/\/riccardofagioli.it\/index.php\/2026\/07\/11\/sai-che-il-tuo-menu-in-pdf-sta-regalando-clienti-ai-concorrenti\/\">prezzo inserito nel menu<\/a> genera un margine adeguato.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">E soprattutto non puoi prendere decisioni consapevoli.<\/p>\n\n\n\n<h2 id=\"h-come-calcolarlo-in-tre-passaggi\" class=\"wp-block-heading\">Come calcolarlo in tre passaggi<\/h2>\n\n\n\n<h3 id=\"h-1-crea-una-scheda-per-ogni-piatto\" class=\"wp-block-heading\">1. Crea una scheda per ogni piatto<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Scegli un piatto del menu e registra tutti gli ingredienti utilizzati per preparare una singola porzione.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ogni ingrediente deve essere pesato. Non puoi affidarti alla memoria o alle quantit\u00e0 usate \u201ca occhio\u201d, perch\u00e9 anche pochi grammi, moltiplicati per centinaia di porzioni, possono incidere sul risultato economico.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La scheda dovrebbe contenere:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>nome dell\u2019ingrediente;<\/li>\n\n\n\n<li>quantit\u00e0 utilizzata;<\/li>\n\n\n\n<li>costo al chilogrammo o al litro;<\/li>\n\n\n\n<li>costo effettivo della quantit\u00e0 impiegata.<\/li>\n<\/ul>\n\n\n\n<h3 id=\"h-2-considera-la-resa-reale-degli-ingredienti\" class=\"wp-block-heading\">2. Considera la resa reale degli ingredienti<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Il prezzo pagato al fornitore non coincide sempre con il costo effettivo della materia prima utilizzabile.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Se acquisti un chilogrammo di prodotto ma, dopo pulizia, scarti e lavorazione, ne rimangono soltanto 600 grammi, il costo reale del prodotto utilizzabile sar\u00e0 pi\u00f9 elevato.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Questo vale per carne, pesce, verdure e per tutte le materie prime soggette a scarto o calo di peso.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ignorare la resa significa sottostimare il costo del piatto.<\/p>\n\n\n\n<h3 id=\"h-3-calcola-l-incidenza-sul-prezzo-netto\" class=\"wp-block-heading\">3. Calcola l\u2019incidenza sul prezzo netto<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Dopo aver sommato il costo di tutti gli ingredienti, devi confrontare il risultato con il prezzo di vendita al netto dell\u2019IVA.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Immaginiamo un piatto di tagliatelle al rag\u00f9:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>costo totale degli ingredienti: 3,80 euro;<\/li>\n\n\n\n<li>prezzo al pubblico: 21 euro;<\/li>\n\n\n\n<li>prezzo netto, senza IVA al 10%: circa 19,09 euro.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Il calcolo sar\u00e0:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>3,80 \u00f7 19,09 \u00d7 100 = 19,9%<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il Food Cost del piatto sar\u00e0 quindi di circa il 20%.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Questo significa che, per ogni euro netto incassato, circa venti centesimi vengono utilizzati per acquistare gli ingredienti.<\/p>\n\n\n\n<h2 id=\"h-come-costruire-il-foglio-excel\" class=\"wp-block-heading\">Come costruire il foglio Excel<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Non serve necessariamente un software complesso per iniziare. Un semplice foglio Excel pu\u00f2 diventare il primo cruscotto economico del tuo ristorante.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Puoi creare una tabella con queste colonne:<\/p>\n\n\n\n<figure class=\"wp-block-table\"><table class=\"has-fixed-layout\"><thead><tr><th>Ingrediente<\/th><th>Quantit\u00e0 per porzione<\/th><th>Costo unitario<\/th><th>Costo nel piatto<\/th><\/tr><\/thead><tbody><tr><td>Pasta<\/td><td>100 g<\/td><td>4,00 \u20ac\/kg<\/td><td>0,40 \u20ac<\/td><\/tr><tr><td>Carne<\/td><td>120 g<\/td><td>14,00 \u20ac\/kg<\/td><td>1,68 \u20ac<\/td><\/tr><tr><td>Pomodoro<\/td><td>80 g<\/td><td>3,00 \u20ac\/kg<\/td><td>0,24 \u20ac<\/td><\/tr><tr><td>Condimenti<\/td><td>\u2014<\/td><td>\u2014<\/td><td>0,50 \u20ac<\/td><\/tr><\/tbody><\/table><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Nell\u2019ultima colonna dovrai calcolare il costo effettivo di ogni ingrediente utilizzato nella porzione.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Per esempio, se inserisci la quantit\u00e0 in chilogrammi, la formula potr\u00e0 essere:<\/p>\n\n\n\n<p class=\"has-small-font-size wp-block-paragraph\"><em><strong>Quantit\u00e0 * costo unitario<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Alla fine della tabella dovrai aggiungere:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>il costo totale delle materie prime;<\/li>\n\n\n\n<li>il prezzo di vendita netto;<\/li>\n\n\n\n<li>la percentuale di Food Cost.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Una struttura semplice, ma sufficiente per iniziare a capire quali piatti stanno contribuendo ai tuoi risultati e quali, invece, stanno consumando margine.<\/p>\n\n\n\n<h2 id=\"h-il-food-cost-non-serve-solo-a-risparmiare\" class=\"wp-block-heading\">Il Food Cost non serve solo a risparmiare<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Uno degli errori pi\u00f9 comuni \u00e8 pensare che il Food Cost serva esclusivamente a ridurre il costo degli ingredienti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In realt\u00e0, \u00e8 soprattutto uno strumento di pianificazione.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Un piatto con un Food Cost percentualmente basso non \u00e8 necessariamente pi\u00f9 conveniente di uno con un Food Cost pi\u00f9 alto.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Se vendi un piatto a 10 euro con un Food Cost del 20%, il margine economico generato sar\u00e0 comunque limitato. Un piatto venduto a 40 euro, anche con un\u2019incidenza maggiore, potrebbe lasciarti molti pi\u00f9 euro in valore assoluto.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Per questo non devi guardare soltanto la percentuale.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Devi considerare anche:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>il margine generato da ogni vendita;<\/li>\n\n\n\n<li>il numero di piatti venduti;<\/li>\n\n\n\n<li>il tempo necessario per prepararli;<\/li>\n\n\n\n<li>la complessit\u00e0 del servizio;<\/li>\n\n\n\n<li>gli sprechi;<\/li>\n\n\n\n<li>l\u2019intero mix delle vendite.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">La domanda corretta non \u00e8 quindi: <strong>\u201cQuale piatto ha il Food Cost pi\u00f9 basso?\u201d<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La domanda corretta \u00e8: <strong>\u201cQuale piatto contribuisce maggiormente al risultato economico del ristorante?\u201d<\/strong><\/p>\n\n\n\n<h2 id=\"h-food-cost-teorico-e-food-cost-reale\" class=\"wp-block-heading\">Food Cost teorico e Food Cost reale<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Esiste poi una differenza fondamentale tra il Food Cost teorico e quello reale.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il <strong>Food Cost teorico<\/strong> \u00e8 quello calcolato attraverso le ricette e le grammature standard.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il <strong>Food Cost reale<\/strong> \u00e8 quello che emerge alla fine del periodo confrontando gli acquisti effettuati, le giacenze di magazzino e le vendite.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La differenza tra questi due valori pu\u00f2 essere causata da:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>porzioni non rispettate;<\/li>\n\n\n\n<li>scarti eccessivi;<\/li>\n\n\n\n<li>errori di preparazione;<\/li>\n\n\n\n<li>deterioramento delle merci;<\/li>\n\n\n\n<li>omaggi non registrati;<\/li>\n\n\n\n<li>consumi interni;<\/li>\n\n\n\n<li>errori di inventario;<\/li>\n\n\n\n<li>sottrazioni o mancanze.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">La scheda ricetta ti dice quanto <strong>dovresti<\/strong> spendere.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il controllo di magazzino ti dice quanto hai speso <strong>davvero<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00c8 proprio nello scostamento tra questi due valori che spesso si nascondono le perdite invisibili del ristorante.<\/p>\n\n\n\n<h2 id=\"h-il-food-cost-non-rappresenta-tutto-il-costo-del-piatto\" class=\"wp-block-heading\">Il Food Cost non rappresenta tutto il costo del piatto<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Gli ingredienti sono soltanto una parte dei costi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Un piatto deve essere preparato, cucinato, impiattato, servito e gestito. Per questo devi considerare anche il costo del personale direttamente coinvolto nella produzione e nel servizio.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La somma tra costo delle materie prime e costo del lavoro viene spesso definita <strong>Prime Cost<\/strong> o costo primo.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A questo devono poi aggiungersi:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>affitto;<\/li>\n\n\n\n<li>utenze;<\/li>\n\n\n\n<li>manutenzioni;<\/li>\n\n\n\n<li>commissioni;<\/li>\n\n\n\n<li>marketing;<\/li>\n\n\n\n<li>software;<\/li>\n\n\n\n<li>consulenze;<\/li>\n\n\n\n<li>tasse;<\/li>\n\n\n\n<li>costi amministrativi;<\/li>\n\n\n\n<li>altri costi generali.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Il Food Cost \u00e8 quindi un indicatore fondamentale, ma non pu\u00f2 essere utilizzato da solo per determinare automaticamente il prezzo di vendita.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il prezzo deve tenere conto dei costi, ma anche del posizionamento del ristorante, del valore percepito, del mercato, dell\u2019esperienza proposta e degli obiettivi economici dell\u2019azienda.<\/p>\n\n\n\n<h2 id=\"h-dal-food-cost-al-menu-engineering\" class=\"wp-block-heading\">Dal Food Cost al Menu Engineering<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Dopo aver calcolato correttamente i costi, puoi <a href=\"https:\/\/riccardofagioli.it\/index.php\/2026\/06\/19\/menu-engineering-come-progettare-un-menu-che-vende-per-te\/\">analizzare il menu<\/a> incrociando due dati:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>popolarit\u00e0 del piatto;<\/li>\n\n\n\n<li>margine generato.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">In questo modo puoi distinguere:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Stelle:<\/strong> piatti popolari e redditizi, da valorizzare e promuovere.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cavalli di battaglia:<\/strong> piatti molto richiesti ma con margini ridotti, da ripensare nelle porzioni, negli abbinamenti o nel prezzo.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Puzzle:<\/strong> piatti redditizi ma poco ordinati, sui quali migliorare presentazione e proposta commerciale.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cani:<\/strong> piatti poco richiesti e poco redditizi, che probabilmente non hanno pi\u00f9 motivo di occupare spazio nel menu e nel magazzino.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Questa analisi ti permette di intervenire in modo concreto: modificare una ricetta, rivedere una grammatura, aggiornare un prezzo, formare il personale sulla vendita o eliminare un piatto inefficiente.<\/p>\n\n\n\n<h2 id=\"h-il-primo-passo-verso-una-gestione-consapevole\" class=\"wp-block-heading\">Il primo passo verso una gestione consapevole<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Calcolare il Food Cost non \u00e8 la parte pi\u00f9 affascinante del lavoro di un ristoratore.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Richiede tempo, precisione e aggiornamenti continui. Ma \u00e8 uno dei passaggi necessari per trasformare un\u2019attivit\u00e0 gestita attraverso sensazioni ed esperienza in un\u2019impresa controllata attraverso dati e procedure.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il tuo foglio Excel non risolver\u00e0 da solo tutti i problemi del ristorante.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ti permetter\u00e0 per\u00f2 di iniziare a porre le domande giuste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Quanto mi costa realmente ogni piatto?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Quanto margine produce?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le porzioni vengono rispettate?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Gli aumenti dei fornitori sono stati aggiornati nelle ricette?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il Food Cost teorico coincide con quello reale?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Quali prodotti stanno generando utile e quali stanno soltanto producendo lavoro?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Gestire senza conoscere queste risposte significa guidare senza cruscotto.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Puoi anche continuare a muoverti, ma non saprai con precisione a quale velocit\u00e0 stai andando, quanto carburante ti rimane e quando sar\u00e0 necessario correggere la direzione.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Quanti piatti del tuo menu hanno oggi una scheda ricetta aggiornata con gli ultimi prezzi dei fornitori?<\/p>\n\n\n\n<script
